Gluten-Free, Sugar-Free Banana Bread
- 2 cups Gluten-Free All-Purpose Baking Mix
- 3 ripe bananas, mashed
- 1/2 cup butter
- 1/4 tsp. salt
- 1 tsp. baking powder
- 3 eggs
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 cup xylitol
Preheat oven to 350º. Blend all ingredients together and mix well. Pour batter into a greased loaf pan (or 3 small loaf pans). Bake for 45-55 minutes (30-35 minutes for small pans), until an inserted toothpick comes out clean.
